Subject: [PATCH] desktop-minimal: remove fonts-symbola

fonts-symbola can't be updated because of a license change in newer versions
so it provides ancient monochrome emoji
but we already install fonts-noto-color-emoji
which is full color up-to-date emoji
(same emoji as used on Google devices like the Pixel phone)
